Alu Gobhi

Cauliflower and potatoes cooked with spices

  • 1 small sized cauliflower
  • 2 medium sized potatoes
  • 1/2 inch piece of ginger, grated
  • 3 – 4 tablespoons vegetable oil
  • 1/2 teaspoon cumin seeds
  • Salt to taste
  • 1/2 teaspoon cayenne pepper(optional)
  • 1/2 teaspoon ground coriander seeds
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1 tablespoon dried fenugreek leaves
  • 1 tablespoon lemon juice

Cut the cauliflower into florets about an inch in diameter at the top. Peel and cut the potatoes into one-inch pieces. Heat the oil over a medium high flame and add the cumin seeds. After a second, add the grated ginger. Sauté for 30 seconds, then add the cauliflower and potatoes as well as all the spices. Mix well cover and cook on medium low heat until very tender, about 20 minutes. Stir occasionally in between to prevent the food from burning and sticking. When the vegetables are done, uncover the pan and mix in the lemon juice. Stir-fry for 5 minutes for all the liquid to evaporate. Serve hot.
