Cranberry Cardamom Cookies
- 1/2 cup unsalted butter (1 stick), slightly softened
- 1/2 cup sugar
- 1 cup all-purpose flour
- 1/2 tsp cardamom powder
- 1/2 cup dried cranberries
Preheat oven to 300F. Line a baking sheet with parchment.
In deep bowl, mix butter and sugar together until well blended, light and creamy. Slowly mix in all-purpose flour and cardamom powder. Add dried cranberries. Mix well. Using your hands, knead gently until mixture forms a smooth, large lump.
Make small, smooth walnut-sized balls out of cookie dough. Place on parchment, about 2 inches apart. Bake 30–35 minutes until cookies puff up, expand and brown lightly around edges. Remove from oven, cool slightly and serve warm. Store extra cookies in an airtight container once cooled.
