Carrot Kheer With Saffron And Nuts

This rich kheer, tinted a glorious orange with saffron and studded with nuts and raisins makes for a wonderful dessert to end any meal. Easy to make, delicious and healthy, Carrot Kheer is a crowd pleaser that I often serve at festive occasions in my home. Please watch our video above. Carrot Kheer With Saffron And Nuts

1 tbsp each: ghee, slivered almonds, golden raisins

2 cups grated carrots

2 cups milk

1 can (354 ml) unsweetened evaporated milk

¼ - ½ cup sugar, as desired

¼ tsp saffron strands

½ tsp ground cardamom

Additional slivered nuts and ground cardamom for garnishing

Warm ghee in deep, heavy saucepan set over medium heat

Add almonds and raisins, sauté for 1 min till they pick up some colour

Add grated carrots and sauté for 2 - 3 mins till they lose their raw smell

Turn heat down to low and then add both kinds of milk, mixing well with the carrots. Cook for about 10 mins until carrots have softened, stirring occasionally

Add desired amount of sugar and the saffron, stir gently to mix. Cook uncovered for another 10 mins until carrots are cooked through and kheer has thickened, stirring occasionally

Cool kheer for 10 mins, then stir in the ground cardamom

Transfer kheer to serving bowl and garnish with additional nuts and a pinch of ground cardamom

Serve kheer warm or chilled, according to your liking (kheer will thicken in the refrigerator over time)
